In this chapter, the relationship between BCFA, diet, and disease will be discussed in order to evaluate them as possible biomarkers of health and/or disease.

Blood and Urinary Flavonoidstrometry are, currently, the most commonly used methodologies. This chapter summarizes the current literature on these and other innovative technologies for the analysis of flavonoids in human biospecimens, as well as their application in nutritional studies evaluating the exposure to these compounds and their relationships with diseases.
