Newlyisolated wine polyphenols and tannins are presented and theirstructures and .in. .vitro. biological properties arediscussed that could strongly support the hypotheses that thosemolecules could insure beneficial health effects. .This book will be of particular interest to people involved inproblems of public health, but also in the wine industry or in winemaking, as well as to physicians who are concerned by the difficultquestion of ageing and its related chronic diseases.
