Production of Organic Acids from Agro-Industrial Residuesarticle on the exploitation of large scale biological wastes for the production of value-added products. Aroma Compoundsmeans to improve economical feasibility of these processes and application of aroma compounds. In order to understand the flavour of (traditional) foods a multitude of scientific investigations were carried out and a number of appropriate analytical tools for flavour research were developed in the past few decades.

This chapter reviews the developments on processes and products developed for the value-addition of sugarcane bagasse through the biotechnological means and it also discuss about various pre-treatment methods for efficient utilization of this substrate for the production of fermentable sugars.
