Introduction,e proteins as antifreeze proteins (AFPs) or, when specifically referring to the glycosylated variants, antifreeze glycoproteins (AFGPs). The binding of AFPs to ice surfaces has two main effects; thermal hysteresis and inhibition of recrystallization.
